How did early psychologists believe flavors were recognized compared to current understandings?
Early psychologists believed taste was determined primarily by smell.
They believed each region on the tongue was responsible for detecting a specific flavor, while we now know all regions can detect all flavors.
Initially it was thought that genetic factors determine flavor recognition, but this has since been debunked.
It was first proposed that flavors were recognized through the texture of food; current understanding suggests it's through chemical senses.
